Shiitake (Lentinula edodes), the “king of mushrooms” is one of the best known and most sought-after Asian edible mushrooms. For thousands of years, shiitake has also been used in traditional Chinese dietetics. It contains polysaccharides, lentinan and the alkaloid eritadenine, as well as many other vital substances. DR.
