The black gold from South America

Not a real bean, but a true spice miracle: tonka beans are the dried seeds of the Brazilian teak (Dipteryx odorata), also known as cumaru, and are considered a traditional talisman in South America.  On the plate, they impress with a sensual interplay of fine flavours reminiscent of bitter almond, vanilla, caramel, liquorice and woodruff.

In Europe, the tonka bean has become a popular trend spice. It is particularly popular in high-end cuisine – for refining fine desserts such as crème brûlée, panna cotta, rice pudding or chocolate mousse. Due to its flavour profile, it is often used as a substitute for vanilla. Freshly grated or boiled in milk, it gives dishes an unmistakable, luxurious flavour.

The spice is caffeine-free and vegan. Preparation

Due to the high coumarin content, we recommend using KOTTAS Kräuterhaus Tonka Bean (whole) sparingly. It is best grated fresh with a fine grater and added directly to sweet or savoury dishes.

To flavour desserts, a whole tonka bean can also be boiled in milk or cream for around 10 minutes. After boiling, rinse the bean, dry and reuse several times.

Notes

Storage: Store flavour-protected, dry and not above room temperature (25°C).
