This gives the popular tea speciality a flowery-sweet note that harmonises perfectly with the grassy flavour profile of the green tea. In China, several infusions are prepared from the leaves of jasmine tea, which differ in flavour:
- First infusion: Boil water and allow it to cool to approx. 80°C to preserve the valuable ingredients. Pour 1 to 1 ½ teaspoons per cup into a preheated teapot, cover and leave to infuse for 2-3 minutes and strain.
- Second and further infusions: Use the leaves from the first infusion and infuse them again with the 80°C hot water, leave to infuse for approx. 30 seconds, strain and best enjoyed pure!
- Our tip: The second infusion is lower in tannins and caffeine and therefore has a particularly harmonious flavour.
