It belongs to the rue family and its name refers to the central Chinese province of Sichuan, where Szechuan pepper has a firm place in the local cuisine. For this exciting tingling spice, the dried fruit peels, from which the seeds have been removed, are used. These contain above all a lot of essential oils, which by their interaction ultimately cause the citrus flavor.
